Our claw & knuckle meat is cooked, picked, vacuum-sealed in 2lb bags and flash frozen.
Allow to thaw overnight in the refrigerator. Gently empty thawed meat into a colander and allow to drain (DO NOT PRESS OR SQUEEZE THE MEAT– this will negatively affect the taste and texture of the finished product). Allow to drain in the colander for 10 minutes. It is then ready for use. This product is great when gently warmed in butter before adding to dish. Example– stew/bisque/chowder, used to finish a pasta dish, for tacos, etc.
