All of our claw & knuckle meat is cooked, picked and sealed in 2lb bags. For our fresh claw & knuckle meat, this is an aerobic bag (this means oxygen can escape the bag, but not enter it, so a wet/weeping bag is normal!). For our frozen claw & knuckle meat, it’s a vacuum sealed bag.
If freezing the fresh claw & knuckle meat is desired, we recommend placing the meat in a freezer bag/container (do not freeze in the aerobic bag in which it comes).
To use the fresh claw & knuckle meat, simply empty contents into a colander (this step is optional!), and allow to drain (DO NOT PRESS OR SQUEEZE THE MEAT) for a few minutes. Roughly chop if desired, product is ready to eat/enjoy!
To use the frozen claw & knuckle meat, allow to thaw overnight in the refrigerator. Gently empty thawed meat into a colander and allow to drain (DO NOT PRESS OR SQUEEZE THE MEAT– this will negatively affect the taste and texture of the finished product). Allow to drain in the colander for 10 minutes. It is then ready for use. This product is great when gently warmed in butter before adding to dish. Example– stew/bisque/chowder, used to finish a pasta dish, for tacos, etc.
